Ranch-Coconut & Lemon Shrimp #RSC
- 1 12 lbs shrimp, peeled and deveined
- 1 (4 ounce) package Hidden Valley Original Ranch Seasoning Mix
- 8 ounces Greek yogurt
- 12 cup cream of coconut
- 2 lemons, juice and zest of
- 12 cup parmesan cheese, freshly grated
- 12 cup shredded coconut
- In a large skillet over medium-high heat, stir all ingredients (yes, it's that easy) until shrimp is no longer pink.
- Serve.
- This is great over rice or pasta.
