Cranberry Cake
- 1 package cake mix yellow
- 2 large eggs
- 23 cup cranberry juice
- 1 x orange zest small
- 3 tablespoons sweet relish cranberry-orange
- 1/4 cup nuts finely chopped
- 1 x food coloring red
- Combine cake mix, eggs, cranberry juice and orange rind; beat until smooth, following beating directions on package.
- Remove 13 of batter and add relish and nuts.
- Add enough food coloring to make batter a deep red.
- Spoon light and dark batters alternately into greased and floured 9x5x3 inch loaf pan.
- Bake in moderate oven 350F (180C).
- for 65 to 70 minutes, or until cake tests done.
- Let stand in pan 5 minutes, then turn out on rack and let stand until cool.
- To decoreate, frost top and sides of cake with your favorite frosting.
- Makes one 9x5x3 inch loaf.
