Cranberry Cake

  1. Combine cake mix, eggs, cranberry juice and orange rind; beat until smooth, following beating directions on package.
  2. Remove 13 of batter and add relish and nuts.
  3. Add enough food coloring to make batter a deep red.
  4. Spoon light and dark batters alternately into greased and floured 9x5x3 inch loaf pan.
  5. Bake in moderate oven 350F (180C).
  6. for 65 to 70 minutes, or until cake tests done.
  7. Let stand in pan 5 minutes, then turn out on rack and let stand until cool.
  8. To decoreate, frost top and sides of cake with your favorite frosting.
  9. Makes one 9x5x3 inch loaf.
