Easy Chicken Florentine Recipe
- 4 single boneless chicken breasts, skinned
- 1/2 c. flour
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 (10 ounce.) boxes frzn minced spinach, thawed & squeezed dry
- 1 lg. onion
- 1/3 c. Parmesan cheese
- Vegetable oil
- Saute/fry onion and spinach in oil till onion is soft.
- Spread in bottom of greased casserole dish.
- Combine flour, salt and pepper.
- Dredge the chicken in the flour mix and shake off the excess.
- Saute/fry breasts in oil till golden.
- Lay breasts on top of spinach.
- Sprinkle with Parmesan cheese.
- Cover and bake at 350 degrees for 35 to 40 min.
- Serve with warm, buttered noodles.
- Serves 4.
