Apple Cinnamon Protein Muffin

  1. Core and grate the apples in a large bowl.
  2. Mix in flax meal and cold water.
  3. Preheat oven to 350F/180C
  4. Add eggs and stir until combined with apples and flax meal.
  5. add yogurt to the bowl and stir.
  6. Mix with dry ingredients: stevia, oat flour, protein powder, baking soda baking powder and cinnamon powder.
  7. Pour the batter into your muffin tin.
  8. (Don't forget to grease it first or use a liner!
  9. I like to use coconut oil.)
  10. Bake for 25 minutes.
  11. Allow to cool for at least 10 minutes after removing from the oven.
