Burning Spear Rub For Chicken Recipe
- 1 Tbsp. Dry chopped onion
- 1 Tbsp. Onion pwdr
- 2 tsp Dry thyme
- 1/2 tsp Salt
- 1 tsp Grnd allspice
- 1/4 tsp Grnd nutmeg
- 1/4 tsp Grnd cinnamon
- 2 tsp Sugar
- 1 tsp Coarsely grnd black pepper
- 3/4 tsp cayenne pepper To 1 tsp.
- 1/4 c. Snipped chives
- 1/2 c. Finely minced onion
- 4 Tbsp. Lime juice
- 2 tsp warm pepper sauce To 3 tsp. optional
- 1 Tbsp. oil

- In a blender or possibly food processor, combine the dry onion, onion pwdr, thyme, salt, nutmeg, cinnamon, sugar, black pepper, cayenne, chives, minced onion, lime juice and pepper sauce.
- Blend to a thick paste.
- (If using skinless chicken, add in the oil to the paste.)

- Rub the paste over the chicken, cover and chill overnight.
- 3.
- Grill the chicken - don't remove the spice paste before grilling.
- Note: Makes sufficient for 3 1/2 pound cut up chicken, or possibly 4 large chicken breast halves, skin removed.
