Lime Butter
- 4 tablespoons unsalted butter, softened
- 2 teaspoons grated lime zest
- 1/2 teaspoon salt
- 2 teaspoons finely chopped fresh mint, optional
- 1 tablespoon fresh lime juice
- In a small bowl, cream the butter with the lime zest, salt and mint, if using.
- Gradually stir in the lime juice.
- Use immediately or refrigerate.
