Apricot Couscous

  1. Combine water, apricots, margarine and cardamom in 1 quart casserole dish.
  2. Cover.
  3. Microwave on high for 4 minutes, or until water reaches full boil.
  4. Add couscous.
  5. Cover.
  6. Let stand 5 minutes or until liquid is absorbed.
