Apricot Couscous
- 1 1/2 cups water
- 2 ounces apricots dried, finely chopped
- 1 teaspoon margarine nondairy
- 13 teaspoon cardamom seeds
- 1 cup couscous
- Combine water, apricots, margarine and cardamom in 1 quart casserole dish.
- Cover.
- Microwave on high for 4 minutes, or until water reaches full boil.
- Add couscous.
- Cover.
- Let stand 5 minutes or until liquid is absorbed.
