Salmon & Spinach Strata
- 8 slices whole wheat bread, cut into 1-inch squares
- 1 pkg. (300 g) frozen chopped spinach, thawed, drained
- 1 red pepper, chopped
- 2 cans (213 g each) salmon, drained, flaked Walmart Supercenter 1 lb For $5.00 thru 02/14
- 1 cup Cracker Barrel Shredded Light 4 Cheese Italiano Cheese
- 4 whole eggs
- 4 egg whites
- 2-1/4 cups skim milk
- 1 tsp. dry mustard
- 1 tsp. dill weed
- 2 Tbsp. Kraft 100% Parmesan Light Grated Cheese
- Spread half the bread onto bottom of 13x9-inch baking dish sprayed with cooking spray.
- Cover with layers of half each of the spinach, peppers, salmon and shredded cheese.
- Repeat layers.
- Beat next 5 ingredients with whisk until well blended; pour over ingredients in baking dish.
- Cover with foil.
- Refrigerate 4 hours.
- Heat oven to 375 degrees F. Bake strata, covered, 1 hour or until centre is set and top is lightly browned, uncovering after 30 min.
- Sprinkle with Parmesan.
- Let stand 10 min.
- before cutting to serve.
