Low-Fat Applesauce Muffins
- 1 1/4 c. flour
- 1 Tbsp. baking powder
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 c. Post Grape-Nuts brand cereal
- 1 c. skim milk
- 1 egg, slightly beaten
- 1/2 c. chunky applesauce
- 1/2 c. firmly packed brown sugar
- 2 Tbsp. margarine, melted
- 1/2 c. dried cranberries or raisins
- Heat oven to 400u0b0.
- Mix flour, baking powder, cinnamon and salt in large mixing bowl.
- Mix cereal and milk in another bowl; let stand 3 minutes.
- Stir egg, applesauce, sugar and margarine into flour mixture.
- Stir just until moistened.
- (Batter will be lumpy.) Stir in cranberries or raisins.
- Spoon batter into muffin pan sprayed with no stick cooking spray, filling each cup 2/3 full. Bake 20 minutes or until golden brown.
- Serve warm.
- Freeze any leftover muffins.
- Makes 12.
