Chocolate Marble Cream Cheese Pie
- 1-1/2 cup chocolate cookie crumbs
- 2 tbsp. granulated sugar
- 6 tbsp. butter, melted
- 8 oz. cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp. vanilla
- 2 egg yolks
- 1 tsp. unflavored gelatin
- 1/4 cup water
- 4 oz. semi-sweet chocolate
- 1 cup whipping cream
- Strawberries, for garnish
- Preheat the oven to 350F.
- Prepare the crust: Combine the chocolate cookie crumbs, sugar and melted butter.
- Press the mixture onto the bottom and sides of a 9-inch pie pan.
- Bake for 8 minutes.
- Allow crust to cool completely.
- Prepare the filling: Beat the cream cheese, sugar and vanilla until smooth.
- Beat in the egg yolks, one at a time, until well blended.
- Combine the gelatin and water in a small saucepan over low heat until the gelatin is dissolved.
- Cool slightly.
- Beat the gelatin mixture into the batter.
- Melt the chocolate.
- Combine half the batter with the meltedchocolate.
- Whip the cream until it forms soft peaks.
- Fold half the whipped cream into the chocolate batter.
- Fold the remainder into the vanilla batter.
- Use a large spoon to place alternate spoonfuls of chocolate and vanilla batter into the crust until all has been used.
- Use a small spatula to swirl the batter to form a marble pattern.
- Chill for at least 3 hours.
- Garnish with strawberries.
