Lemon Star
- 1 cup softened butter
- 1 cup sugar
- 3 tablespoons milk
- 2 teaspoons grated lemon peel
- 1 egg
- 3 cups flour
- 1 12 teaspoons baking powder
- 12 teaspoon salt
- 1 teaspoon lemon oil (optional)
- In a large bowl, beat butter and sugar until light and fluffy.
- Add milk, lemon peel, lemon oil and egg; blend well.
- Stir in flour, baking powder and salt.
- mix well.
- Cover with plastic wrap and refrigerate for 1-2 hours.
- Preheat oven to 400.
- Roll dough 1/3 at a time to 1/8" thick.
- Cut star shaped cookies.
- Bake for 5-8 minutes or until edges are lightly golden.
- Immediately remove from cookie sheet and cool completely.
- In a small bowl combine 2 cups powdered sugar, 3 tablespoons lemon juice and 1-2 tablespoons water; beat until smooth.
- Stack pairs of stars, alternating the points with the glaze holding them together and on top.
- Sprinkle with yellow sugar.
