Tofu Puff Donburi
- 1 aburage (tofu puff)
- 1 ounce enoki mushrooms
- 1 egg, beaten
- 1 tablespoon soy sauce
- 1 tablespoon mirin
- 1 tablespoon sake
- 1 teaspoon sugar
- 13 bunch mitsuba, chopped
- 13 cup dashi stock
- Rinse the aburage with boiling water, julienne.
- Remove the root base of the enoki and chop.
- Put the liquid ingredients, sugar and tofu puff in a shallow pan and cook for 2-3 minutes.
- Add the enoki and cook for 1 minute.
- Add the mitsuba.
- Stir in the egg and shake gently until almost set.
