Frittata Primavera

  1. Cook onion, pepper, potato, broccoli, oregano and black pepper in margarine or butter in 10-inch nonstick omelet pan or skillet until vegetables are tender-crisp.
  2. Beat egg substitute for 2 minutes with mixer at high speed, until light and fluffy; pour over vegetables.
  3. Cover and cook over medium heat for 5 to 7 minutes until set.
  4. Serve from pan or carefully invert onto warm serving plate.
  5. Serve immediately.
