Frittata Primavera
- 1 medium onion, chopped
- 1 medium red or green pepper, cut into strips
- 1 medium potato, peeled and grated (about 1 cup)
- 1 cup coarsely chopped broccoli
- 1 tsp. dried oregano leaves
- 1/8 tsp. ground black pepper
- 1 Tbsp. margarine or butter
- 1 cup cholesterol-free egg product
- Cook onion, pepper, potato, broccoli, oregano and black pepper in margarine or butter in 10-inch nonstick omelet pan or skillet until vegetables are tender-crisp.
- Beat egg substitute for 2 minutes with mixer at high speed, until light and fluffy; pour over vegetables.
- Cover and cook over medium heat for 5 to 7 minutes until set.
- Serve from pan or carefully invert onto warm serving plate.
- Serve immediately.
