Potato Volcano
- 2 tablespoons butter
- 2 tablespoons flour
- salt
- 14 teaspoon pepper
- 1 12 cups milk
- 1 cup grated cheddar cheese
- 6 medium potatoes, cooked and mashed
- 12 cup hot milk
- 3 tablespoons butter
- paprika
- parsley sprig
- Blend butter, flour, 1/2 teaspoons salt, pepper and milk in top of double boiler; cook until thickened, stirring constantly.
- Fold in cheese; stir until melted.
- Keep hot.
- Beat hot potatoes with milk, butter and 1/4 tsp salt until fluffy.
- Heap into greased, shallow casserole; form a crater in center.
- Pour cheese sauce over potatoes.
- Broil until browned.
- Sprinkle with paprika; garnish with parsley.
