Potato Volcano

  1. Blend butter, flour, 1/2 teaspoons salt, pepper and milk in top of double boiler; cook until thickened, stirring constantly.
  2. Fold in cheese; stir until melted.
  3. Keep hot.
  4. Beat hot potatoes with milk, butter and 1/4 tsp salt until fluffy.
  5. Heap into greased, shallow casserole; form a crater in center.
  6. Pour cheese sauce over potatoes.
  7. Broil until browned.
  8. Sprinkle with paprika; garnish with parsley.
