Vegan Mayonnaise
- 1/2 block Firm tofu
- 1 1/2 tbsp Lemon juice
- 1 tbsp Cooking flaxseed oil (or linseed oil)
- 1 clove Garlic
- 1/8 Onion
- 1 pinch Rock salt
- 1/2 tsp Japanese mustard (to taste)
- Drain the firm tofu very well.
- Put all the ingredients in a blender and blend well.
- Put this on an avocado and cook in a toaster oven for 10 minutes to make avocado gratine.
- This is high in calories though so I don't serve it to my mother.
- My mother likes having this dish: a Shojin-ryori (Zen Buddhist cuisine) Jerusalem artichoke "potato" salad..
