Vegan Mayonnaise

  1. Drain the firm tofu very well.
  2. Put all the ingredients in a blender and blend well.
  3. Put this on an avocado and cook in a toaster oven for 10 minutes to make avocado gratine.
  4. This is high in calories though so I don't serve it to my mother.
  5. My mother likes having this dish: a Shojin-ryori (Zen Buddhist cuisine) Jerusalem artichoke "potato" salad..
