Baked duck with Wild rice
- 6 duck breasts
- 2 cup wild rice
- 1 tbsp butter
- 1 poultry seasoning
- 1 salt & pepper to taste
- 1 can mushroom or celery soup
- 8 slice bacon
- heat oven to 425F
- melt butter in skillet, season duck to taste with salt and pepper
- brown duck breast on both sides in skillet
- when rice is cooked, mix with soup and spread in bottom of glass baking pan
- place duck breast on top of rice mixture, and cover them with bacon strips(it may take 10 strips if breasts are larger)
- bake at 425 for 30 to 45 min.
- or until duck is cooked through
