Sesame Noodles
- 1 (16 ounce) package linguine
- 12 cup creamy peanut butter
- 14 cup soy sauce
- 14 cup seasoned rice vinegar
- 2 tablespoons sesame oil
- 1 tablespoon fresh lime juice
- 12 teaspoon crushed red pepper flakes
- 1 large red bell pepper
- 3 (4 ounce) unpeeled kirby cucumbers or 1 large regular cucumber, peeled and seeded
- 14 cup packed fresh cilantro leaves
- 1 12 cups shredded carrots (about half of a 10 ounce package)
- Heat a large, covered saucepot of salted water to boiling over high heat.
- Add pasta and cook as package directs.
- Meanwhile, in large bowl, whish together peanut butter, soy sauce, vinegar, oil, lime juice and crushed red pepper until smooth.
- Cut red bell pepper and cucumber into matchstick-thin strips.
- Chop cilantro.
- Drain pasta.
- Rinse with cold water; drain again.
- Add pasta, cucumber, red bell pepper and carrots to sauce in bowl; toss to coat.
- Sprinkle with cilantro and serve.
