Cornmeal Cake with PHILLY Orange Frosting
- 1-1/4 cups flour
- 1/2 cup cornmeal
- 2 tsp. Magic Baking Powder
- 1/2 tsp. salt
- 1 Tbsp. orange zest Safeway 1 lb For $0.79 thru 02/09
- 1/2 cup oil
- 1 whole egg
- 2 egg whites
- 1/2 cup brown sugar blend sugar replacement
- 1/3 cup orange juice
- 1/4 cup Philadelphia Light Cream Cheese Product
- 1/4 cup thawed Cool Whip Light Whipped Topping
- 2 tsp. orange zest Safeway 1 lb For $0.79 thru 02/09
- Heat oven to 375 degrees F.
- Mix first 5 ingredients until well blended; set aside.
- Beat next 5 ingredients in large bowl with mixer until well blended.
- Gradually beat in flour mixture.
- Pour into 8-inch round pan sprayed with cooking spray.
- Bake 35 to 40 min.
- or until golden brown.
- Cool in pan 10 min.
- ; invert onto wire rack.
- Gently remove pan.
- Turn cake over; cool completely.
- Place cake on plate.
- Mix cream cheese product and Cool Whip with whisk until well blended.
- Stir in orange zest.
- Spread onto top and side of cake.
- Keep refrigerated.
