Mincemeat Pie
- 1 lb. lean beef stew meat (cooked tender and put through food chopper)
- 1/4 lb. beef suet
- 3-1/2 lb. chopped tart cooking apples
- 1-1/2 lb. chopped raisins
- 1/2 tbl. salt
- 1/2 cup beef stock
- 1 cup brown sugar
- 2-1/2 cup apple cider
- -----
- 1/4 cup white sugar
- 2-1/2 cup purple grape juice
- 1/2 tsp. mace
- 1/8 tsp. pepper
- 1 tsp. allspice
- 1 tsp. cloves
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 cup sorghum molasses
- 1/2 orange, chopped
- 1/2 lemon, chopped
- 1/4 cup vinegar
- Cook stew meat until tender in a pot with a little water.
- Take beef out of pot and use the broth to cook the suet five minutes.
- Run the beef and suet through the chopper.
- Put back in pot with the apples, raisins, salt, brown sugar, and cider.
- Simmer one hour, stirring occasionally.
- Add remaining ingredients and boil another ten minutes, stirring occasionally.
- If canned, process 30 minutes in a water bath.
- Or, freeze in cartons.
