Pan Fried Potatoes

  1. Peel off the skin from the potato.
  2. You can keep the skin on if you like.
  3. Rub the skin with brush to clean.
  4. Slice the potato in to 1/8" thick and cut into 1/8" sticks.
  5. Rinse the potatoes in the water and soak them in a bowl filled with water for 2 minutes to remove some starches.
  6. Drain the potatoes and set aside.
  7. Heat oil in a non stick pan over medium heat.
  8. Add garlic and stir it for 5 seconds.
  9. Add potatoes and stir them well to coat with garlic.
  10. Cover with lid and cook for 2 minutes.
  11. Season with salt and cook 1-2 more minute without the lid.
  12. Taste the potatoes if they are soft.
  13. If not, continue to cook for 1-2 minutes with the lid on and off.
  14. When potatoes are tender with a little body, sprinkle some sesame seeds and pepper.
  15. Toss gently.
  16. Serve warm or on room temperature.
