Hashed Brown Omelet Recipe

  1. Cook bacon till crisp.
  2. Drain bacon and crumble.
  3. Set aside.
  4. Cook hash browns, onions, green pepper (optional) with small amount of oil.
  5. Spray 12 inch skillet with Pam.
  6. Pat hash brown mix into skillet.
  7. Blend Large eggs, lowfat milk, salt and pepper to taste.
  8. Pour over potato mix.
  9. Top with cheese and bacon.
  10. Cover, cook over low heat about 10 min.
  11. Loosen omelet with spatula.
  12. Serve in wedges.
