Seafood Enchiladas Recipe
- 2 med. white onions, coarsely minced
- 1 (7 ounce.) can diced green chilies
- 1 1/2 tbsp. butter
- 1 pound crabmeat
- 1 pound tiny shrimp
- 1 c. walnut halves, toasted
- 1 (12 ounce.) can medium pitted ripe olives, liquid removed and halved
- 1 pound Monterey Jack cheese, shredded
- 1 pound cheddar cheese, shredded
- Vegetable oil
- 16 corn tortillas
- 2 c. half and half
- 1 c. lowfat sour cream
- 1/2 c. butter, melted
- 1 1/2 teaspoon dry oregano
- 1 teaspoon garlic salt
- Cooked, shredded chicken can be substituted for seafood.
