Strawberry Sunshine Cocktail

• 2 cups strawberries, stemmed and sliced, plus slices for garnish
• 4 limes, quartered
• 1/2 cup mint leaves
• 1/2 cup strawberry syrup
• 1 bottle Champagne

1. Special equipment: mortar and pestle
2. Add strawberries and limes into a large mortar or bowl.
3. Crush together to extract juices.
4. Add mint and crush to incorporate the flavors.
5. Add strawberry syrup and pour into a pitcher.
6. Add Champagne and stir.
7. Serve in ice filled glasses and garnish with strawberry slices.
