Lori's Sausage Stew
- 2 lbs bulk sausage
- 3 potatoes (peeled, diced)
- 1 large carrot (peeled, diced)
- 1 shallot (minced)
- 1 12 green peppers (seeded, diced)
- 1 (28 ounce) cancrushed tomatoes with basil
- 1 large garlic clove (minced)
- salt
- fresh cracked pepper
- cayenne (to taste)
- Brown sausage, breaking up.
- Add the potatoes, carrot, shallot, peppers, tomatoes and garlic.
- Bring to a boil.
- Reduce.
- Simmer 3 hours.
- Season.
- Serve.
