Boone Tavern's Southern Fried Chicken Recipe
- 1 fryer, cut in serving pcs, skinned
- 1/2 c. pancake mix
- Salt and pepper to taste
- 1 egg, beaten
- 2 tbsp. lowfat milk
- Deep fat for frying
- Steam chicken in colander over boiling water (covered) for 20 min.
- Mix salt and pepper into pancake mix.
- Beat egg and lowfat milk together.
- Dip chicken in egg mix, and roll in pancake mix till well coated.
- Heat fat and deep fry chicken till golden.
