Crock Pot Sweet-Sour Pork
- 2 lbs pork shoulder, cut in strips
- 1 green bell pepper, cut in strips
- 12 medium onion, sliced thinly
- 34 cup carrot, shredded
- 2 tablespoons sweet pickles, coarsely chopped
- 14 cup brown sugar, packed
- 2 tablespoons cornstarch
- 14 cup water
- 1 (20 ounce) can pineapple chunks, drained and juice reserved
- 1 cup pineapple juice, reserved from the can of pineapple chunks
- 14 cup cider vinegar
- 1 tablespoon soy sauce
- Place pork strips in slow cooker.
- Layer the green pepper, onion, carrots, and pickles on top of the pork.
- In medium bowl, mix together brown sugar and cornstarch.
- Stir in water, pineapple juice, vinegar, and soy sauce; mix until smooth.
- Pour over ingredients in slow cooker.
- Cover.
- Cook on Low 5-7 hours.
- One hour before serving, stir in pineapple chunks.
- Serve over buttered noodles with an additional dash of vinegar or garlic to taste.
