Korean-Style Choregi Salad with Homemade Dressing

  1. Peel some parts of the cucumber using a peeler.
  2. Cut in half lengthwise, and cut diagonally into thin slices.
  3. Cut the apple into quarter round slices, and soak in lightly salted water to prevent it from changing the color.
  4. Make the Choregi dressing.
  5. Add the grated apple and garlic to the basic Chinese dressing, and mix well.
  6. You can store the basic Chinese dressing for a long time, but once you add in the apple, you can't do that, so please make it each time.
  7. Rip up the loose leaf lettuce into bite-sized pieces.
  8. Squeeze the excess water out from the apple and cucumber, then mix with the lettuce.
  9. Mix the vegetables with the Choregi dressing, and done.
  10. Please just toss the vegetables in the dressing instead of rubbing it in.
  11. Shred the white part of the Japanese leek, and put a lot of it on top the salad.
  12. Swirl in ra-yu on top of the leek if you like.
  13. Alternatively, you can mix it in the other vegetables.
