Korean-Style Choregi Salad with Homemade Dressing
- 6 leaves Loose leaf lettuce
- 1 Cucumber
- 1/4 Apple
- 8 cm Japanese leek (the white part)
- 1 the ingredients are the followings Chinese Dressing
- 2 tbsp Vinegar
- 1 tbsp Sugar
- 1 1/2 tbsp Soy sauce
- 1 tsp Roasted sesame seeds
- 1 tbsp Sesame oil
- 1 tbsp Grated apple
- 1/3 tsp Grated garlic
- 1 as much (to taste) Ra-yu
- Peel some parts of the cucumber using a peeler.
- Cut in half lengthwise, and cut diagonally into thin slices.
- Cut the apple into quarter round slices, and soak in lightly salted water to prevent it from changing the color.
- Make the Choregi dressing.
- Add the grated apple and garlic to the basic Chinese dressing, and mix well.
- You can store the basic Chinese dressing for a long time, but once you add in the apple, you can't do that, so please make it each time.
- Rip up the loose leaf lettuce into bite-sized pieces.
- Squeeze the excess water out from the apple and cucumber, then mix with the lettuce.
- Mix the vegetables with the Choregi dressing, and done.
- Please just toss the vegetables in the dressing instead of rubbing it in.
- Shred the white part of the Japanese leek, and put a lot of it on top the salad.
- Swirl in ra-yu on top of the leek if you like.
- Alternatively, you can mix it in the other vegetables.
