Crispy Baked Potato Fingers Recipe

  1. In a small bowl, combine lowfat sour cream and 1 Tbsp.
  2. of the seasoning.
  3. Cover and refrigeratetill serving time.
  4. Preheat oven to 375 degrees.
  5. Scrub potatoes; pat dry.
  6. Cut each lengthwise to make 8 wedges.
  7. In a small saucepan, heat butter.
  8. Stir in remaining seasoning.
  9. Dip potato wedges in butter mix, turning to coat on all sides.
  10. Arrange wedges in a single layer on a baking sheet, cut side down.
  11. Spoon any leftover butter mix over potatoes.
  12. Bake 25-30 min or possibly till golden and edges are crisp.
  13. Drain on paper towels.
  14. Serve with lowfat sour cream dip.
