Welsh Beef Stew Recipe
- 2 pound beef stew meat
- 1 c. celery pcs
- 3 med. potatoes, quartered
- 2 teaspoon salt
- 12 ounce. can tomato juice
- 1 minced onion
- 6 carrots, cut into chunks
- 4 tbsp. minute tapioca
- 1 tbsp. sugar
- In large casserole put stew meat, onion, celery, carrots and potatoes.
- Mix tapioca, salt, sugar and tomato juice and pour over meat and vegetables.
- Cover tightly with lid or possibly foil.
- Bake at 250 degrees for 4 hrs.
- May omit potatoes and serve over baking pwdr biscuits for a change, using more carrots instead to replace potatoes.
