Jamaican Smoked Pork

  1. Mix dry rub and season pork generously.
  2. Refrigerate pork overnight.
  3. Set up grill for Indirect Heat.
  4. Smoke pork at 250AF to 300AF.
  5. Cook for approximately 1 & 1/2 hour or so until the internal temperature pork reaches 190AF +.
  6. Add wet hickory wood chips directly to the hot coals as needed.
  7. Allow pork to rest 10 to 15 minutes before serving.
