Kellie's Corn Pudding Bake
- 2 cups milk
- 2 (14 3/4 ounce) cans corn
- 2 canned corn
- 3 large eggs
- 1 (6 1/2 ounce) envelope cornbread-muffin mix
- 25 reduced-fat butter-flavored crackers, about one full package in box
- 1 teaspoon salt
- 12 teaspoon pepper, to taste
- 3 tablespoons butter
- Spray 9x13 pan with Non Stick Cooking spray, Heat oven to 350.
- In Large bowl combine corn, milk and beaten eggs, salt and pepper to taste.
- add half of package of corn bread mix and stir.
- Pour into greased pan.
- in small bowl melt butter and add crushed cracker crumbs, spread over top of corn bake.
- over cracker crumbs sprinkl;e remaining dry cornbread mix over the top.
- bake for 50 minuted or until firm and tooth pick comes out clean at 350.
