Mums tomato pasta soup
- 2 410 gram tins of crushed tomatoes
- 3 or more cloves of garlic, finely chopped
- 1 brown onion, diced
- 2 cup chicken stock
- 1 carrot halved and thinly sliced
- 3/4 cup chopped celery
- 125 grams bowtie pasta
- 2 tbsp sugar
- 3 tbsp chopped basil
- 1 salt and pepper
- In a large pot fry onion and garlic in a drizzle of olive oil
- Add tins of tomatoes and sugar
- Reduce heat to low; cover and simmer for 10 mins stirring occasionally
- Stir in stock, vegetables, salt and pepper
- Add pasta once vegetables have softened; 20-25 mins
- Once pasta has cooked add basil and ladel into bowls
