Roasted Red Pepper Couscous

  1. Chop up the roasted red pepper and let drain while you do next step.
  2. In a saucepan, combine 1 cup water, olive oil, salt, cumin, garlic, and allspice.
  3. Bring to a boil.
  4. Stir in couscous and sprinkle with parsley.
  5. Cover and remove from heat immediately, let stand for 5 minutes.
  6. Fluff with fork and serve.
