A Honey of a Honey Cake

  1. Preheat oven to 325F.
  2. In a large bowl, beat eggs, sugar and oil until pale in color.
  3. Add honey, and mead.
  4. Mix.
  5. In a second bowl, combine flower, baking soda, baking powder, cinnamon, and ginger.
  6. One cup at a time, add dry ingredients to wet ingredients.
  7. Blend until smooth.
  8. Transfer batter to a greased 10 x 14-inch baking dish.
  9. Bake for approximately 35 minutes, or until a toothpick inserted into the center comes out dry.
  10. Let cake cool and cut into honeycomb shapes.
  11. Drizzle with lavender honey and garnish with fresh lavender flowers, if desired.
