Pepper Pea Salad With Sesame Dressing

  1. Bring a small saucepan of water to a boil.
  2. Add the peas, cook 1 minute.
  3. Drain in a colander and place under cold running water to stop cooking.
  4. Chill in a bowl of ice water.
  5. Drain, pat dry with paper towels and place in a large serving bowl.
  6. Add pepper strips, radishes, scallions and salad greens.
  7. Cover and refrigerate.
  8. Toast sesame seeds in a small skillet over medium heat, stirring often, until golden brown.
  9. Scrape them onto a plate, cool, wrap and set aside.
  10. Put remaining Dressing ingredients into a jar, cover, shake well and refrigerate.
  11. Just before serving:
  12. Add sesame seeds to dressing.
  13. Cover and shake until blended.
  14. Pour over salad; toss to mix and coat.
  15. Enjoy!
