Spicy Italian Sausage Penne
- 2 cups penne pasta
- 2 Italian sausages
- 1 cup tomato sauce
- 1 small onion, sliced
- 3 garlic cloves, minced
- 3 tablespoons olive oil
- 34 cup sliced mushrooms
- 2 roma tomatoes, chopped
- 2 tablespoons fresh basil, chopped
- 3 tablespoons fresh parsley, chopped
- 1 teaspoon chili flakes
- 2 teaspoons anchovy paste
- salt
- pepper
- parmesan cheese, grated
- In frying pan, add 1/2 tbsp oil and brown sausages, approximately 5 minutes.
- Add 1/4 cup of water and cover.
- Let cook for approximately 8 minutes, remove from pan and set aside.
- In same pan, add remaining oil and onions and saute for 3 minutes.
- Add mushrooms and a pinch of salt and saute for 3 minutes.
- Add garlic, anchovy paste and chili flakes and cook for 5 minutes.
- Add tomatoes and saute for 5 minutes more.
- Cut the sausages into diagonal slices and add them to the pan along with the tomato sauce and cook till sauce is thickened, approximately 8 minutes on med/high heat.
- Remove from heat and add the basil and parsley.
- Drain pasta and add to the sauce.
- Serve topped with grated parmesan.
