Pasta Bites With Salmon and Caramelized Onion
- 2 tablespoons olive oil
- 12 cup sweet white onion, julienned (Maya or Vidalia)
- 1 large shallot, julienned
- 13 cup red onion, julienned
- 2 tablespoons white wine
- 8 ounces clam juice
- 14 cup milk
- 1 pinch dried thyme
- 8 ounces salmon fillets, cut into 1/2-inch pieces
- 16 ounces small shell pasta
- 2 tablespoons butter
- 4 ounces parmesan cheese, ground
- Heat oil in a large skillet.
- Add onions and cook, stirring frequently, until soft and brown, about 8 minutes.
- Deglaze with wine and cook 1 minute, scraping up browned bits.
- Add clam juice, milk and thyme plus salt and pepper to taste.
- Bring to a boil.
- Lower heat to a fast simmer and reduce by half, about 5 minutes.
- Add salmon and stir gently until cooked through, 3 - 5 minutes.
- Remove from heat.
- Cook pasta according to package directions.
- Drain and return to pot.
- Add butter and cheese, stirring until well mixed.
- Pour salmon and sauce over pasta and toss.
- Check seasoning and serve hot with bright green vegetables, warm rolls and a crisp cold salad.
