Macaroni Vegetable Casserole Recipe
- 1 1/2 c. cooked macaroni
- 1 c. lowfat milk
- 1 (19 ounce.) can tomatoes
- 1/2 c. shredded carrot
- 1 teaspoon salt
- 3 Large eggs, beaten
- 1 c. soft bread crumbs
- 2 c. coarsely shredded cheddar cheese
- 1/3 c. onion, minced
- 1/4 teaspoon pepper
- Heat oven to 350 degrees.
- Place macaroni in a 1 1/2 qt casserole.
- Combine all ingredients and stir mix into macaroni.
- Bake uncovered 1 1/4 hrs.
- Serves 6.
