Roasted Garlic & Chive Potato Salad

  1. TOSS asparagus, onions and 2 tsp (10 mL) oil; set aside.
  2. IN a large roasting pan, toss potatoes with remaining oil.
  3. BAKE potatoes at 400F (200C) for 45 minutes, turning once.
  4. Add vegetables to pan.
  5. Bake 15 minutes or until potatoes and vegetables are tender.
  6. COOL to room temperature and toss with salad dressing.
