Fluffy Strawberry Charlotte Pie
- 3 qt. fresh strawberries, hulled, divided
- 1-1/2 cups JELL-O Brand Assorted Red Sugar Free Gelatin
- 2-1/4 qt. boiling water
- 1-1/2 qt. nonfat vanilla yogurt
- 6 each ready-to-use vanilla wafer crumb crust
- Reserve 6 of the strawberries for garnish (or 1 strawberry for trial recipe).
- Place remaining strawberries in food processor container; cover.
- Process until pureed; set aside.
- Dissolve gelatin in boiling water.
- Stir in pureed strawberries.
- Refrigerate about 40 minutes or until slightly thickened.
- Place gelatin mixture in large bowl of electric mixer fitted with wire whisk attachment.
- Add yogurt; beat on medium speed 1 to 2 minutes until light and fluffy.
- Pour about 3 cups of the gelatin mixture into each crust.
- Refrigerate 2 to 3 hours or until set.
- Garnish each pie with 1 of the reserved strawberries.
