Fluffy Strawberry Charlotte Pie

  1. Reserve 6 of the strawberries for garnish (or 1 strawberry for trial recipe).
  2. Place remaining strawberries in food processor container; cover.
  3. Process until pureed; set aside.
  4. Dissolve gelatin in boiling water.
  5. Stir in pureed strawberries.
  6. Refrigerate about 40 minutes or until slightly thickened.
  7. Place gelatin mixture in large bowl of electric mixer fitted with wire whisk attachment.
  8. Add yogurt; beat on medium speed 1 to 2 minutes until light and fluffy.
  9. Pour about 3 cups of the gelatin mixture into each crust.
  10. Refrigerate 2 to 3 hours or until set.
  11. Garnish each pie with 1 of the reserved strawberries.
