Adult Summer Fruit Salad
- 12 cup honey
- 2 large limes, rind grated and juiced
- 1 vanilla bean, halved lengthways
- 4 peaches, halved, stones removed
- 4 nectarines, halved, stones removed
- 4 plums, halved, stones removed
- 3 mangoes, peeled, diced
- 250 g strawberries, hulled, halved
- 250 g cherries
- 150 g blueberries
- 12 cup chilled vodka (optional)
- Combine 1 cup water, honey, lime rind and juice in a saucepan.
- Scrape seeds from vanilla bean and add to pot along with the beans.
- Place over high heat, bring to the boil.
- Reduce heat, simmer for 5 minutes.
- Transfer to jug and chill, remove vanilla pods.
- Cut fruit into wedges.
- place in large bowl, add berries and cherries.
- Add vodka to chilled syrup.
- Pour syrup over fruit and stir gently to combine.
- Keep in fridge till ready to serve.
