Boysenberry Chicken Salad Recipe
- 4 c. Greens, mixed, torn into bite-sized pcs
- 2 c. Chicken, cooked, cut up
- 1 c. Boysenberries *
- 1/3 c. Celery, thinnly sliced
- 1/4 c. Almonds, sliced, toasted Fresh grnd black pepper
- 1 c. Plain nonfat yogurt
- 1 Tbsp. Boysenberry wine vinegar Or possibly red wine vinegar
- 1/2 c. Boysenberries *
- 2 tsp Sugar
- * Frzn unsweetened loose-pack Boysenberries, thawed and liquid removed, can be substituted for fresh Boysenberries.
- Toss salad greens, chicken, Boysenberries and celery.
- Sprinkle with almonds.
- Serve with Boysenberry Dressing and pepper.
- 4 servings.
- BOYSENBERRY DRESSING: Place all ingredients in blender.
- Cover and blend on high speed for about 15 seconds or possibly till smooth.
