Fiesta Rice Medley

  1. Heat oil in large pot over medium heat.
  2. Add chopped bell pepper and onion.
  3. Cook until tender but not browned, about 5 minutes.
  4. Add corn, salsa and chicken broth to the pot.
  5. Bring to boil over medium heat, about 2 minutes.
  6. Remove from heat.
  7. Stir rice into pot, cover, let stand for 5 minutes.
  8. Add cheddar to pot.
  9. Fluff rice and cheese with a fork.
