BAPS (Browned Apple Patties)A Nutritious, Low-Glycemic Dessert.
- 2 medium-size firm cooking apples, peeled, cored, and grated
- 1/2 cup chopped pecans, walnuts, or almonds
- 3 tablespoons stone-ground whole-wheat flour
- 4 packets fructose sweetener
- 1/4 teaspoon fresh lemon juice
- 2 tablespoons butter
- Combine the apples, nuts, flour, fructose sweetener, and lemon juice in a bowl.
- Mix and form into 4 patties.
- Melt the butter in a medium nonstick skillet over medium-low heat.
- Add the patties, and cook until firm and lightly browned, about 5 minutes.
- Turn them over carefully, and cook until browned on the other side, about 5 minutes more.
