Hearty Fisherman's Pie
- 200 grams potatoes - peeled and diced
- 100 grams grated cheese (something light, e.g. mild Cheddar)
- 75 grams frozen peas
- 2 packages parsley sauce (I use colmans)
- 150 grams white pollock (chopped into cubes)
- 1/4 pints milk
- 1/4 stick butter
- 1 pinch salt and pepper
- preheat oven to gas 5
- boil potatoes in pan of lightly salted water until a knife breaks potato easily
- begin part cooking fish in a steamer for 8-10 minutes
- start simmering peas on a medium heat for 8-10 minutes
- follow instructions on parsley sauce mix.
- Take off heat
- Once fish is cooked, lay evenly into a 9x5" baking dish.
- Drain peas and stir into parsley sauce.
- Once potatoes are ready, add milk and butter, season to taste and mash to desired consistency
- Pour parsley sauce mixture over fish evenly.
- Top with mashed potato and spread out evenly with base of a fork
- Bake in oven for 20 minutes, sprinkle over cheese and finish under grill until cheese starts to crisp.
- Serve with veg!
