Catalan Palm Sunday's cookies

  1. Mix the lard and the sugar and then slowlt add the eggs, the grated lemon peel and the cinnamon.
  2. Add the flour and milk.
  3. Knead until you have a compact dough though not compact enough to roll it.
  4. Let it rest for at least 30min in the fridge.
  5. Pre-heat oven at 180C.
  6. Roll it with a roller.
  7. It should be 1cm.
  8. (Put flour on the superfice you are going to roll it on.
  9. Put some more on the roller)
  10. Use cookie cutters and put them on a tray.
  11. If wanted paint with egg.
  12. Bake at 180C for around 20 min.
