Sing'in Shrimp

  1. In a large saute pan, over medium heat, melt the butter.
  2. Add the onions.
  3. Season with salt and pepper.
  4. Saute for 1 minute.
  5. Add the garlic and green onions and continue to saute for 1 minute.
  6. Season the shrimp with salt and pepper.
  7. Add the shrimp and continue to saute for 2 minutes.
  8. Remove the pan from the heat and add the brandy.
  9. Place the pan back on the stove and flame the brandy, shaking the pan back and forth a couple of times.
  10. Add the shiitakes and cook for 2 minutes.
  11. Add the cream and bring the liquid to a boil.
  12. Reduce to a simmer and cook for 1 minute.
  13. Season with salt and pepper.
  14. Spoon the shrimp mixture into the pastry shells.
  15. Garnish with parsley.
  16. Serve warm.
