Colourful Stir-Fry with Prawns and Spinach

  1. Peel the prawns shells and devein.
  2. Make a slit on its back and season with salt, pepper, and sake.
  3. Rinse the spinach well, then cut into 4 cm lengths.
  4. Crack an egg and beat with a whisk.
  5. Heat vegetable oil (not listed) in a pan, pour in the whisked egg, and stir, making large circles, until half-cooked.
  6. Set aside.
  7. Add oil again to the same pan.
  8. Cook the prawns until they change colour.
  9. Then, add the spinach and stir-fry.
  10. When the spinach wilts, add the seasonings.
  11. Taste to check whether you need more salt or not.
  12. Add the eggs from Step 3, toss together, and it's done.
