Light Scrambled Egg Muffins

  1. Saute onion, green pepper, and mushrooms in olive oil.
  2. Add in turkey crumbles, and seasonings.
  3. Put 2 tablespoons of sausage veggie mixture into muffin cups.
  4. Add 3 T egg substitute
  5. Top with shredded cheese.
  6. Bake in 350 degree oven for 25 minutes.
