The Meatloaf Recipe
- 2 pounds Lean Ground Beef Or Half Each Of Ground Beef And Ground Pork Or Veal
- 1/2 cups Quick Cooking Oats
- 1/2 cups Onions, Minced
- 1/2 cups Diced Green Peppers, Optional
- 2 Tablespoons Fresh Parsley, Minced
- 2 Tablespoons Prepared Mustard
- 2 teaspoons Salt
- 2 teaspoons Ground Pepper
- 1 teaspoon Marjoram Leaves (optional)
- 2 whole Eggs, Beaten
- 1/2 cups Milk
- 3 Tablespoons Brown Sugar
- 1/4 cups Ketchup
- 1 teaspoon Prepared Mustard
- 1/4 teaspoons Fresh Ground Nutmeg
- Preheat oven to 350 F.
- Combine ground beef, oats, onions, green peppers, parsley, mustard, salt, pepper, marjoram, eggs, and milk in a large bowl.
- I saute the onions and green peppers in a small amount of oil until soft and allow to cool slightly before adding the the rest of the ingredients, but that is your choice.
- Mix lightly but well, and do not over mix.
- Press mixture into a 9 x 5 x 3 loaf pan.
- Mix brown sugar, ketchup, mustard, and nutmeg in a bowl until smooth.
- Pour the Piquant sauce over the meatloaf and bake for 70 minutes.
- Remove from oven.
- Let the meatloaf rest for 10-15 minutes before removing it from the pan and slicing.
